Protein Packed Mole Sauce

Protein can feel like a chore for many patients striving to meet protein goals and follow a low carb diet. Fortifying food with protein powder offers extra nutrition while enjoying something other than a plain shake. This recipe features Premier Protein in a mole sauce which can add Mexican flavor to a healthy meal. Utilize this mole on any number of lean protein options or fiber rich veggies. Added bonus? Use the mole on its own during the puree phase of your post-op bariatric diet, just make sure it is blended smooth. Ingredients:

  • Chocolate Premier Protein® – Half scoop 
  • Veggie Stock – 2 Cups
  • Tomato Paste – 6 oz
  • Chipotle Peppers in Adobo Sauce – 2 Whole + 1 TBS of the Sauce
  • Coconut Oil – 1 Tbls
  • Onion, Chopped – 1 Cup
  • Garlic – 3 Cloves
  • Dried Oregano – 1 tsp
  • Ground Cumin – 1 tsp
  • Ground Cinnamon – 1/4 tsp

Directions:

Warm coconut oil over medium heat in a large, heavy sauce pan. Add chopped onions to pan and cook until fragrant and translucent. Add tomato paste and garlic to your pan. Sauté for roughly 2 to 3 minutes.

Bring heat to high and pour in your vegetable stock. Add peppers and reserved adobo sauce. Stir your mixture and incorporate remaining spices and your protein powder. Simmer over medium heat to thicken the mixture.

Carefully pour mixture into blender and puree until smooth. Serve over your favorite protein and grilled vegetables.
